As a result, if you don't change this setting the fans will always hum at a quiet ~700-800 rpm even as the cpu exceeds 70C or more.

All of my fans are Noctua NF-A14 with a 1500RPM top speed. My GTX 1080 Ti gets above 80°C while playing games (max I've seen is 86°C). I installed the Corsair iCUE program to check it out and can see Fan #1 and Fand #2 were going at 1100-1200 RPM, Pump at 2000 with the Temp being 30-31°. Found same thing that default fan profiles too aggressive for my liking. Setup custom curves that make pc much happier and quiet. Have fan spin as low as 850 up to 2000rpm at 70c.
